Honoring Heritage and Tradition Maida Trattoria draws its name and inspiration from the town of Maida in Calabria, Italy—known for its rolling hills, medieval roots, and tight-knit community. The name reflects the owners’ deep connection to their Italian heritage and their passion for bringing those traditions to life in Northern Colorado. A Family-Owned Labor of Love Behind Maida Trattoria are Fort Collins locals McCabe and Marli Callahan, well known for their longstanding community presence through Mugs coffee shops. Marli’s sister, Kai Churman, brings over 15 years of hospitality experience as General Manager, and Chef Andy Lipps—a seasoned culinary expert with nearly two decades of experience—leads the kitchen with a devotion to authentic Italian flavors. This team’s shared vision has created a space that blends family, food, and community.
