Fort Collins just got a flavorful new addition to its culinary scene—Maida Trattoria, now open in the historic Avery Building at 100 North College Avenue. This family-owned Italian eatery brings the warmth, charm, and tradition of southern Italy to the heart of Old Town. Honoring Heritage and Tradition Maida Trattoria draws its name and inspiration from the town of Maida in Calabria, Italy—known for its rolling hills, medieval roots, and tight-knit community. True to the spirit of a classic trattoria, Maida offers a welcoming, casual space where scratch-made dishes and shared meals create meaningful moments. The name reflects the owners’ deep connection to their Italian heritage and their passion for bringing those traditions to life in Northern Colorado. A Family-Owned Labor of Love Behind Maida Trattoria are Fort Collins locals McCabe and Marli Callahan, well known for their longstanding community presence through Mugs coffee shops. Marli’s sister, Kai Churman, brings over 15 years of hospitality experience as General Manager, and Chef Andy Lipps—a seasoned culinary expert with nearly two decades of experience—leads the kitchen with a devotion to authentic Italian flavors.
